Bumpy Head Thai Chicken Soup recipe

This is an amazing recipe with a few tweaks our Charlie invented...

This is an amazing recipe with a few tweaks our Charlie invented (and almost killed himself in the process) in another life making soup for Pret A Manger.

- Gently fry some grated ginger, lemongrass garlic and chilli in sunflower oil

- When it begins to change colour chuck in a tin of coconut milk

- Add a litre of chicken stock, a teaspoon of hon dashi fish granules (NB I urge you to buy this stuff. It sounds poncy but is a total game-changer!), half a teaspoon of both smoked paprika and turmeric

- Now for a few good shakes of soy sauce, lime juice and Thai fish sauce

- And finally chuck in your chopped chicken breast pieces and any veg you think suitably are Thai (red peppers, mushrooms, baby corn and pak choi are always a winner)

- Now tell me that isn't the best soup you've ever eaten!
